After a careful selection of traditional grapes Xarel.lo, Macabeo, Parellada and Chardonnay (only for the Reserve), the grape liquid is obtained gently for later controlled fermentation at low temperature. The second fermentation and aging are carried out in bottles following the Champanoise method for at least 30 months to obtain its extreme fineness and elegance.
